Hellsing had two adaptations. The first was well-regarded but was adapted early in the manga's life (so half of the series is an anime exclusive story), it aired on TV meaning it couldn't go all out with the violence. It has a cool opening but there's not much else it has going for it once you compare it to its OVA remake, titled internationally "Hellsing Ultimate".
It's Vampires vs. Nazis. Oh this has a plot, and it doesn't go ALL IN on this premise until Volume IV (episodes are called volumes because it's cool, also because each episode adapts a volume of the manga), but who the hell cares? You are here because you want to see vampires fighting nazis. Since it was released as an OVA, it could be as bloody as it wants, which it takes full advantage of. Hellsing Ultimate might be the anime with the most blood that doesn't make me uncomfortable. And blood can make me squeamish depending on how it's portrayed.
I don't have it listed as a horror anime because I don't think this show is scary just because it has blood everywhere. But if you wanna have a rip-roaring good time, it's still a killer October series.
